At present, different classes of lipid antigens are known to be presented by CD1 molecules to T cells. In particular alpha-galactosylceramide (alpha-GalCer) and sulfatide are involved in significant recognition events. During the last years new and interesting knowledge in the field of CD1-mediated mechanism of antigen presentation to T cells has been acquired, even if many factors which influence CD1antigen binding, presentation and activation of CD1-restricted T cells are still to be clarified. INTRODUCTION Food safety is a goal whose importance has been increasing over the last decade. All fermented foods (cheese, dairy products, beer, wine, soybean sauces, fermented sausages, etc.) carry the risk of biogenic amine contamination [1]. High amounts of most of these molecules can exert toxic effects on human health; in particular tyramine, β-phenylethylamine, hystamine and tryptamine may act on both the nervous and the vascular systems, causing headache, smooth muscle contraction, hypo- or hypertension, gastric acid secretion, allergies, and enteric histaminosis [2,3]. However there are also biogenic amines with positive effects on human health: for example GABA which is an inhibitory neurotransmitter able to reduce blood pressure [4] and provided of antitumoral properties [5]. The accumulation of biogenic amines in foods is the result of amino acid decarboxylation by the fermenting flora and may occur during fermentation and/or food storage. The presence of genes encoding amino acid decarboxylases has been detected in bacterial strains belonging to several species and genera. At present this metabolic potential does not appear to be correlated to any specific microbial group, but rather to be typical of specific strains [6]. The use of suramin, a broad inhibitor of the P2Y purinoceptors sub-family, abrogated the NAD+-induced increases of [IP3]i, [cAMP]i, [cADPR]i and [Ca2+]i,. 3.
